Chipotle Beans & Pork

1 Tablespoon vegetable oil
1 lb pork, cut 1 ½ cubes
1 -15 oz can small white beans, undrained
1-15 oz can pinto beans, undrained
1 – 15 oz can red kidney beans, undrained
1 – 8 oz can no salt added tomato sauce
2 chipotle chilies in adobo sauce, chopped
1 cup fresh cilantro leaves, chopped

Heat oven to 350 degrees coat large covered casserole dish with cooking spray

Heat oil in large skillet over med/high heat Add pork cook 5 min. turn half way through cooking time.

In casserole dish, stir beans, tomato sauce, chipotle, ½ cilantro & pork. Bake covered 30 minutes. Bake uncovered 30-40 minutes until thick.

Garnish with remaining cilantro.
